    The Director of Public Health at the Accra Metropolitan Assembly (AMA), Florence Kuukyi, has raised concerns over some dangerous practices by certain food vendors.

    Speaking in an interview on Adom FM’s ‘Dwaso Nsem’ on February 20, 2026, she disclosed that some bofrot sellers use plastic while frying, believing it makes the snack crispier.

    According to her, some vendors who prepare plantain chips also engage in the same practice. She disclosed that, in a bid to hasten the ripening of plantain, some plantain chip sellers place unripe plantains in septic tanks so that the heat from the tanks speeds up ripening.

    “When bofrot sellers go to buy oil, they often purchase the sachet type. Instead of emptying the oil from the sachet, they put the sachet itself into the pan with the oil while frying the bofrot to make it crispy. They do the same when frying plantain chips, believing it makes them crispier as well,” she disclosed.

    Florence Kuukyi cautioned that vendors found engaging in such practices will face the full rigours of the law when her team encounters them.

    However, she noted that the Assembly faces a major challenge with inadequate human resources, which limits their ability to effectively monitor all vendors and safeguard public health.

    “If we come around and catch you, we will take you on. But the challenge is that we do not have enough human resources. We need more environmental health officers in the system so we can properly protect society,” she noted.
